Sushi is a Japanese food item that came into existence 1000 years back
and it is treated as a traditional piece of history. It originally
evolved as a way of conserving fishes. It is an old process where rice,
salt and a heavy stone was used to press the clean raw fish in between
for preservation. It was decided much after the 18th century to skip the
fermentation process and to serve the sushi in its fresh form.
The preparation of sushi includes vinegar rice wrapped with other items
like raw fish and is served by rolling it inside or around the dried up
and compressed sheets of seaweed. However, the topping that is included
in the preparation of sushi can be served individually and it is quite
tasty to eat.

History
The term sushi generated from an ancient grammatical structure means
it is sour, a mirror image of ancient fermented roots. The traditional
style of serving the sushi is with fish and rice preserved using salt
and other related items, which are still popular today. The earliest
form of sushi in Japan was known as Narezushi.
The idea of fermentation of fish preserved between the rice produces
amino acids and breaks the fish down that result in one of the five
basic tastes known as umami in Japanese.
